Soft boiled eggs and sausage

Soft boiled three eggs and cooked two sausage patties for breakfast this morning. Eggs came out with the yolk just a little harder than I wanted, but still good nonetheless.

This was my first time to cook soft boiled eggs. Here’s what I did. Get some water boiling. There should be enough water to cover the eggs by a bit. Once it gets boiling, turn the heat down until it is just a simmer, just like you do when you poach eggs (more on that at a later date).

Using a long spoon, lower the eggs into the water. Today I set a timer for 6 minutes. The whites were completely done, but the yolks were not runny as I prefer. They weren’t hard boiled, but were just more gooey in consistency. I think next time I’ll try 5 minutes. Also, as you’re cracking open the first egg (carefully!), don’t leave the other eggs in the hot water. Otherwise they will continue to cook and the yolks will harden even more.

I cut my sausage patties into smaller pieces and then did the same with the eggs (salt and pepper to taste), grabbing an egg piece and a sausage piece together with every bite. Delicious!
