Paleo Pizza
To start off, I made a paleo pizza crust from this website: fastpaleo.com. It was great! Very easy to make, and very good. I spread it out thinly and then moved it to a pizza pan.
One note on the pan I used. It was a mistake. Even though I sprayed it, the holes in the pan worked against this type of pizza crust. The dough firms up nicely but will slowly sag and seep. So it seeped into all the holes in the pan and effectively stuck to the pan after it was cooked. I was able to get the slices out ok, but I think a better way would be to use a solid pan, or even a rectangular cookie sheet in the future. But I digress…
I then went off-road and just started doing things that sounded good. First, I dumped 16 oz of tomato paste (of course, do all of the following according to your tastes) and spread it out evenly, stopping an inch or so before the edges of the dough. Next, I sprinkled on Italian Seasoning and Garlic Powder. Then I added liberal portions of sliced black and green olives. I covered the entire thing with sliced pepperoni and topped it with a bag of low dairy mozarella.
I had preheated the oven to 500 F, and cooked the fully topped pizza for 10 minutes, checked it, and then put it in for another few minutes after that until it looked done.
I was quite surprised when I tried it. If you had served it to me and not said anything, I would not have been able to detect the paleo ingredients, particularly the crust. Once or twice, and only when eating a piece of crust alone, I could taste a bit of sweetness, like coconut. But when diving into the full pizza with toppings, not even a hint. This is going onto my favorites list for sure!
