Breakfast Scramble #1

2 eggs
3 asparagus spears (top few inches – just the soft parts)
Jalapeño slices to taste
1 cooked sausage patty, chopped
1/2 avocado, sliced

Cook the sausage patty and chop it up
Add all ingredients to a bowl and mix well
Pour mix into the same skillet used to cook the sausage (for the grease so it won’t stick)
Continue to toss the mix in the skillet until eggs are cooked through

Sauteed mushrooms and shallots

Sautéed mushrooms and shallots

1 cup of sliced mushrooms
1/4 cup of sliced shallots
Olive oil to coat 1/3 of the pan
Splash of Worcestershire sauce (optional)
1 tsp minced garlic (or to taste – optional)

Add olive oil to pan and set to medium heat
When pan is heated, add all ingredients
Continue to toss, flip, and stir until shallots have caramelized and mushrooms have darkened
